- Place carrots, prunes and raisins in a pot.
- Cover both with orange juice.
- Bring mixture to a boil, boil 10 minutes.
- Stir in sugar and butter.
- Simmer gently for one hour or until liquid is almost absorbed.
- Sprinkle with lemon zest, orange zest, and fresh ginger.
- Simmer another 5 minutes.
