Instructions
Press crust onto the bottom and up the sides of an ungreased 9 in tart pan with a removable bottom and trim the edges. Generously prick the bottom with a fork and set aside.
In a large skillet, cook the pears, cranberries, apple juice concentrate, and apple pie spice over medium heat until the pears are tender. Pour into the crust. Bake at 375F until the crust is golden brown, 30-35 minutes. Cool on a wire rack.

Instructions
Pour entire bottle of port into a pot large enough to accommodate all the pears, and turn the heat up to medium.
Meanwhile peel the pears and cut in half lengthwise.
Add the sugar, cinnamon stick, and lemon zest to the port wine, stirring until sugar dissolves.
Add pears to the pot and adjust heat until a light simmer is reached.
Low simmer for approximately 8 to 12 minutes or until a fork goes into the pears easily.
Remove pears from pot and set aside to cool.
Meanwhile, increase heat to a simmer and reduce port wine until it begins to thicken. About 15 to 20 minutes.
When pears are cool core and slice. Drizzle with reduction.
If your feeling adventurous request the chef add some toasted walnuts and a wedge of bleu cheese!

Instructions
Preheat the broiler of your oven, and put an oven rack on the top rung of the oven.
Use a knife to slice all the way around the grapefruit flesh where it meets the pith, to loosen it. Then, make little slices on both sides of each segment to loosen them. This will make the grapefruit easier to eat.
Place the grapefruit half on a baking sheet and spread the honey over the surface of the grapefruit.
Broil for 3-5 minutes, or until the top of the grapefruit is beginning to brown and caramelize.
Take the grapefruit out of the oven and immediately sprinkle it with the shredded coconut. Allow to cool a minute or two before eating.

Instructions
Place the cranberries in a colander and rinse them. Pick out and discard any damaged or bruised cranberries.
Bring water, orange juice, sugar, and spices to a boil over high heat. Stir to dissolve the sugar.
Add the cranberries to the pot and return to a boil. Lower the heat and simmer for 10 minutes or until most of the cranberries have burst.
Remove the pot from heat. Let cool completely at room temperature, then transfer to a bowl to chill in the refrigerator. Note that the cranberry sauce will continue to thicken as it cools.

Toast the walnuts and pecans
Place apples, walnuts, pecans, raisins, dates, cinnamon, and clove in a food processor. Pulse for about 2 minutes until the mixture is smooth but still has texture.
Transfer the apples to a large bowl and add the wine, or add the orange and lemon juice for paleo and whole 30.
Stir well to combine. Add the wine gradually until smooth.
Cover and refrigerate until ready to serve.

An Ashkenazi version of a Charoset, an integral part of the Passover Seder, is a spread made out of fruit, dried fruit, nuts, spices, and wine. There are countless variations on charoset from Jewish communities around the world, but this apple and walnut version is very typical of the style made by Ashkenazi Jews who hail from Eastern Europe.

Instructions
Place dates, apricots, raisins, pistachios and honey and place in a food processor.
Pulse for about 2 minutes until the mixture is smooth but still has texture. You may need to break up the sticky mixture a few times if it collects in a ball in the processor.
In a bowl, mix together the sugar and the cinnamon. Form date mixture into balls that are about ¾ inch in diameter. The balls will be sticky and soft. It will be easier to shape them if you wet your hands slightly.
Dry your hands. Dip the balls in the cinnamon sugar and coat thoroughly, and re-roll between your palms to smooth out any rough edges. Serve at room temperature.

Bright and sweet orange juice is delicious to enjoy on its own for a healthy beverage, or include in your favorite drink recipes. And even without a standing juicer it’s very easy to make freshly squeezed orange juice at home. Here I share with you step-by-step instructions for how to make orange juice using a blender or mixer. Note: If you have a simple juicer this will save some time.

Instructions
Peel the oranges and take the orange segments in a blender jar.
Add 1 tablespoon lemon juice. This is optional and you can skip if you want.
Run the blender on low to medium speed for some seconds till the mixture becomes pulpy and the oranges are crushed. Avoid blending too much as we just need to crush the segments and not the seeds.
If the seeds gets crushed, the juice will become bitter. So don't blend at a stretch. You can also use the pulse option of the blender. If you prefer you can remove the orange seeds before juicing them.
Line a juice strainer over a bowl or pan. In the juice strainer, pour the orange juice.
Strain the juice with a help of a spoon. Keep on pressing and moving the spoon, so that the all the juice is strained well.
You should only have the stringy orange pulp remaining after all the juice is strained.
The juice will be collected in the bowl or pan. If you want you can add some sugar or honey or jaggery to the juice to sweeten it.
Pour immediately in glasses and serve orange juice.

Notes
Try to include sweet tasting oranges so that you don’t need to add any additional sweetener. If the oranges are not sweet you will have to add some sugar or honey or your preferred sweetener.
Drink the juice as soon as it is prepared. Don’t keep it standing for few hours as then it will turn bitter.
For a colder juice place the oranges or the orange segments in the refrigerator for a couple of hours.
