Baking Pan, Food Processor, Kitchen towels, Measuring cups and spoons, parchment paper
- 1 1/2 cup cashew raw
- 1 1/2 cup goji berries raw
- 3 teaspoon pure vanilla extract
- 3 tablespoon maple syrup
- 6 tablespoon fresh lemon juice
For rolling:
- 1 1/2 cup unsweetened shredded coconut
In a food processor, grind cashews into a fine meal.
Add goji berries and vanilla to food processor. Color should turn pink. Add the rest of the ingredients.
Roll mixture into small balls (about 1.5 tablespoon each) and then roll in coconut flakes. Place on a cookie sheet lined with parchment paper. Refrigerate before serving.
