Sekihan Red Beans and Rice

Cooking Tools Required

Food storage containers, Kitchen towels, Measuring cups and spoons, Spatula, Stock pot or >5 Qt pot, Top Stove

Ingredients

  • 4 cup short grain brown rice preferably gaba brown rice; can be found at Japanese grocers
  • 3 cup short grain white rice
  • 28 ounce canned kidney beans
  • water 1/2-1 inch above the rice level
  • 2 tsp Kosher salt

Instructions

  • 1. Wash rice thoroughly. Get the water as clear as possible.
  • 2. Pour in water 1/2 inch above the rice level and heat high until boiling. Salt to taste
  • 3. Turn down the heat to low and cook until done(about 15 minutes)
  • 4. Once rice is done, turn off heat and place a towel over the bowl and cover. This aids in pulling up the steam into the towel, resulting in perfectly cooked rice; A middle eastern technique.
  • 5. Mix the ingredients together and serve warm/hot.
  • Optional: Season with tamari or vegan butter or both. Brings out great flavor and so comforting.
