Ingredients
4cupshort grain brown ricepreferably gaba brown rice; can be found at Japanese grocers
3cupshort grain white rice
28ouncecanned kidney beans
water1/2-1 inch above the rice level
2tspKosher salt
Instructions
1. Wash rice thoroughly. Get the water as clear as possible.
2. Pour in water 1/2 inch above the rice level and heat high until boiling. Salt to taste
3. Turn down the heat to low and cook until done(about 15 minutes)
4. Once rice is done, turn off heat and place a towel over the bowl and cover. This aids in pulling up the steam into the towel, resulting in perfectly cooked rice; A middle eastern technique.
5. Mix the ingredients together and serve warm/hot.
Optional: Season with tamari or vegan butter or both. Brings out great flavor and so comforting.
