Ingredients

  • 45 ounce canned chickpeas rinsed and drained
  • 1 red onion large, finely diced
  • 2 zucchini large, grated
  • 7 ounce white mushroom diced
  • ½ cup fresh cilantro finely chopped
  • ½ cup red wine vinegar
  • 3 tablespoon Sriracha sauce
  • 6 tablespoon tahini
  • 3 teaspoon ground cumin
  • 1 ½ teaspoon garlic powder
  • 2 ½ teaspoon freshly ground black pepper
  • 3 tablespoon flax meal
  • 1 ½ teaspoon sea salt
  • 2 1/2 cup gluten-free quick oats
  • 5 tablespoon extra virgin olive oil

For sauteing:

  • 4 tablespoon extra virgin olive oil

Instructions

  • Add chickpeas to a large bowl, mash them with a fork. Add the remainder of the ingredients, and mix well.
  • Form into equal sized patties, 2 per serving. Place in the refrigerator for 10-15 minutes to give the patties time to become firm.
  • Heat olive oil in a skillet over medium heat. When hot, place the patties in the skillet and sauté for 4-6 minutes per side.
Reheating Instructions
Heat in sauté pan over medium heat until heated through.
