Cooking Tools Required

Cutting board, Kitchen towels, Ladle, Measuring cups and spoons, Peeler, Sharp Knives, Spatula, Stock pot or >5 Qt pot, Top Stove

Ingredients

  • 3/4 cup water
  • 2 yellow onion large, chopped
  • 3 stalk celery chopped
  • 2 carrot large, peeled and chopped
  • 5 clove garlic minced
  • 11/2 teaspoon sea salt more or less to taste
  • 5 teaspoon Italian seasoning
  • 30 ounce canned diced tomatoes drained
  • 7 1/2 cup green cabbage chopped or sliced
  • 15 cup vegetable broth

Instructions

  • Add the water to a large pot over medium-high heat. Add the onion, celery, carrot, and garlic and cook for about five minutes until the onions begin to soften. Stir in the salt and Italian seasoning and continue to cook for another one to two minutes.
  • Stir in the tomatoes and cabbage, then add the broth.
  • Bring the soup to a gentle boil, then reduce heat slightly and simmer for 20 to 25 minutes or until the vegetables are tender. Season the soup with additional salt if needed. Divide between bowls and enjoy!
Reheating Instructions
Heat in the microwave on high power until heated through.
