- avocado oil cooking spray for the pan
- 1/2 cup peanut butter
- 1/3 cup unsalted butter softened
- 2/3 cup granulated sugar
- 1/2 cup brown sugar packed
- 2 egg large
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon Kosher salt
- 1/3 cup grape jelly
Preheat oven to 350 degrees and spray 8x8 pan with cooking spray.
In stand mixer (or hand mixer) mix together peanut butter, butter and sugar on medium speed until fluffy, 2-3 minutes.
Add in the brown sugar, eggs and vanilla until creamy.
Lower speed to low, then add in flour, baking powder and salt until just combined.
Spread mixture evenly into baking pan.
Spoon in small dollops of the jam onto the batter and bake for 30-35 minutes.
