Ingredients
16ouncedry pancit wheat noodles do not pre-boil in water, use as is
1 ½poundboneless skinless chicken breastabout 1 large breast, cut into slices 1/4 inch thick
4tablespoonavocado oil
4clovegarlicchopped
1/2red bell pepperjulienne
1/2cupmushroomsliced
1carrotjulienne
1cupgreen cabbagechopped
3stalkgreen onioncut into 1-inch pieces
1yellow onionlarge, cut into slivers
4cupchicken brothmore or less as needed
2tablespoonsoy sauceor to taste
2tablespoonoystser sauce or to taste
Instructions
Note: Do not boil noodles. Use dry as they will soften in the pan with the broth. Place a large sauté pan over medium-high heat. When hot add 1 tablespoon of oil to pan, then add chicken and sauté until cooked through. Remove chicken from pan and set aside.
Add remaining tablespoon oil to pan. Add garlic, and all the vegetables. Sauté for 5-7 minutes. Return chicken to pan.
Add the chicken broth, then the dry pancit noodles. When noodles have softened slightly, lift and turn them, mixing them into the vegetables, until they have absorbed all the broth. Add soy sauce and oyster sauce to taste.
Reheating Instructions
Heat in the microwave on medium-high heat until heated through.
