Miso Soup with Tofu and Green Onions

Ingredients

  • 16 ounce medium firm tofu drained and cut into cubes about ½ inch thick
  • 10 cup bonito stock or vegetable broth for vegan/vegetarian can purchase instant to mix with water, or make homemade with bonito shavings and kombu if available
  • 8 tablespoon miso paste more of less to taste
  • 6 tablespoon green onion thinly sliced

Instructions

  • Add bonito stock to a medium saucepan and heat over medium. When lukewarm remove ½ cup of the stock to a small bowl and blend in miso, making sure there are no lumps. Slowly blend mixture back into stock. Continue to heat but do not boil.
  • When miso is completely dissolved, add tofu and heat for another minute or so.
  • Divide among soup bowls and garnish with green onions.
Reheating Instructions
Heat in the microwave on medium high power until warm.
