Ingredients
16ounce medium firm tofudrained and cut into cubes about ½ inch thick
10cupbonito stock or vegetable broth for vegan/vegetariancan purchase instant to mix with water, or make homemade with bonito shavings and kombu if available
8tablespoonmiso pastemore of less to taste
6tablespoongreen onionthinly sliced
Instructions
Add bonito stock to a medium saucepan and heat over medium. When lukewarm remove ½ cup of the stock to a small bowl and blend in miso, making sure there are no lumps. Slowly blend mixture back into stock. Continue to heat but do not boil.
When miso is completely dissolved, add tofu and heat for another minute or so.
Divide among soup bowls and garnish with green onions.
Reheating Instructions
Heat in the microwave on medium high power until warm.
