Authentic Refried Pinto Beans

Cooking Tools Required

Can Opener, Colander, Cutting board, Measuring cups and spoons, Potato Masher, Saucepan, Sharp Knives, Top Stove

Ingredients

  • 2 tablespoon extra virgin olive oil or lard (not for vegan or vegetarian)
  • 1 white onion small, chopped
  • 4 clove garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 60 ounce canned pinto beans rinsed and drained
  • 1 cup water
  • 1 lime juiced

Instructions

  • Place a medium saucepan over medium-high heat and add the olive oil.
  • When pan is warm add the chopped onion and saute for 5 minutes or until onions are soft and translucent.
  • Add the garlic, chili powder and cumin. Saute an additional 30 seconds.
  • Add the beans and water. Bring to a boil, turn down to a simmer, cover and cook for 5 minutes.
  • Remove from heat. Using a potato masher, mash at least half the beans.
  • Stir in the lime juice.
  • Taste and correct for salt. Add water if needed for desired consistency.
Reheating Instructions
Heat in microwave, covered on high power. Stir halfway through cooking time.
