Ingredients

tablespoon
extra virgin olive oil
or lard (not for vegan or vegetarian)

white onion
small, chopped

garlic
minced

teaspoon
chili powder

teaspoon
ground cumin

canned pinto beans
rinsed and drained
1
cup
water
1
lime
juiced
Instructions
Place a medium saucepan over medium-high heat and add the olive oil.
When pan is warm add the chopped onion and saute for 5 minutes or until onions are soft and translucent.
Add the garlic, chili powder and cumin. Saute an additional 30 seconds.
Add the beans and water. Bring to a boil, turn down to a simmer, cover and cook for 5 minutes.
Remove from heat. Using a potato masher, mash at least half the beans.
Stir in the lime juice.
Taste and correct for salt. Add water if needed for desired consistency.
Reheating Instructions
Heat in microwave, covered on high power. Stir halfway through cooking time.
