Watermelon Salad with Feta and Mint

This refreshing watermelon salad is one of the favorite summer sides. Feta, mint, jalapeno & avocado are the perfect tangy, creamy, and fresh counterpoints to the juicy and sweet watermelon. a great mix of flavors for the hot summer days. This dish is based on Jeanine's recipe from Love and Lemons blog, with slight modifications.

Ingredients

FOR THE DRESSING

  • 4 tablespoon extra virgin olive oil For lower fat, it will taste great with half of the quantitiy of the oil
  • 6 tablespoon lime juice
  • 1 clove garlic minced
  • 1/2 teaspoon Kosher salt

FOR THE SALAD

  • 10 cup watermelon cubed
  • 1/2 cup red onion chopped
  • 2/3 cup feta cheese crumbled
  • 2 avocado cubed
  • 2/3 cup fresh mint torn mint or basil leaves
  • 1 jalapeno pepper or serrano pepper, thinly sliced, optional
  • dash Kosher salt

Instructions

FOR THE DRESSING

  • In a small bowl, whisk together the olive oil, lime juice, garlic, and salt.

FOR THE SALAD

  • Arrange the watermelon and red onions on a large bowl or platter. Drizzle with half the dressing. Top with the feta, avocado, mint, and serrano pepper, if using, and drizzle with remaining dressing. Season to taste and serve.
Reheating Instructions
Best to eat fresh the same day it was prepared.
