This recipe is courtesy of dietician Karin Adoni, and comes from her cookbook Clean Diet by Karin Adoni Company. These delicious patties are a wonderful sub for burgers. If made smaller they can also be enjoyed as an appetizer.
1/2bunchgreen onionsliced including the green and the white parts
3eachegg
1 teaspoonfreshly ground black pepper
4tablespoonpaprika
3teaspoongarlic powder
3teaspoondry thyme
3tablespoonavocado oil
Instructions
Peel and slice yams into 1 1/2 inch chunks. Place in a large pot and fill with water until just covering. Bring to a boil, turn down to medium, and cook for 30 minutes or until tender. Mash. Season with half the sea salt.
Preheat the oven to 375o F
In a large bowl, mix the mashed yams, ground chicken, onion, green onions, eggs, remaining sea salt, pepper, paprika, and garlic powder. Set aside for 10 minutes.
Form mixture into 2 ounce patties (4 per serving). Brush with avocado oil and place on a parchment lined baking sheet. Bake for 10 minutes, then flip and bake an additional 10 minutes.
Reheating Instructions
Heat in a 350 degree oven for 15 minutes, or heat in a large sauté pan over medium heat until heated through.
