Ingredients
extra virgin olive oil

Jasmine rice

yellow onion
large, small dice

chile powder

ground cumin

chicken stock

Kosher salt

teaspoon
freshly ground black pepper

tomato
diced

lime
juiced
Instructions
Heat olive oil in large pot. Saute rice for 2 minutes.
Add onion and sautee 2 more minutes. Season with chile powder, salt, black pepper and cumin.
Add water and chicken broth; stir to combine.
Add diced tomato and lime juice to the pot.
Cover and bring to a boil over medium heat and simmer covered for 30 minutes
Reheating Instructions
reheat for 60 seconds on high in microwave or in a pot with a little bit of water covered for 3 minutes on the stovetop
