Instructions
- Heat olive oil in large pot. Saute rice for 2 minutes.
- Add onion and sautee 2 more minutes. Season with chile powder, salt, black pepper and cumin.
- Add water and chicken broth; stir to combine.
- Add diced tomato and lime juice to the pot.
- Cover and bring to a boil over medium heat and simmer covered for 30 minutes
