Ingredients
1tablespoonextra virgin olive oil
1poundground Italian sausageeither sweet or spicy, depending on taste
1yellow oniondiced
5clovegarlic minced
2teaspoonItalian seasoning
1teaspooncrushed red pepper
5red potatolarge, leave peel on, dice in 1 ½“ cubes
4cupchicken broth
4cupwater
2teaspoonsea salt
2teaspoonground white pepper
1bay leaf
1cupheavy whipping cream
½bunch Kalestems removed and torn into bit sized pieces
Instructions
In a large stock pot, add oil and cook Italian sausage, breaking into bit sized pieces until cooked through, drain most oil, leaving a 1-2 tablespoons in the pot
Add onion, garlic and red chili flakes sauté 2-3 minutes
Add potatoes, pour in broth, salt & pepper and bay leaf
Bring to a boil, then lower heat and simmer for 15-20 minutes until potatoes are tender
Turn off heat and add kale and heavy cream, stir and adjust seasoning to taste
