Instructions
- In a large stock pot, add oil and cook Italian sausage, breaking into bit sized pieces until cooked through, drain most oil, leaving a 1-2 tablespoons in the pot
- Add onion, garlic and red chili flakes sauté 2-3 minutes
- Add potatoes, pour in broth, salt & pepper and bay leaf
- Bring to a boil, then lower heat and simmer for 15-20 minutes until potatoes are tender
- Turn off heat and add kale and heavy cream, stir and adjust seasoning to taste
