- Preheat oven to 400 degrees F
- In a bowl, sprinkle salt and pepper onto chicken breasts.
- Dip chicken into egg, and then coat with chopped pistachios, pressing lightly to adhere. Repeat until all chicken is coated.
- In an oven-safe skillet, heat oil over medium-high heat. Add chicken to the pan and cook for 5 minutes on each side.
- Remove chicken from heat and put skillet into oven to bake for 10 to 15 minutes. Top with chopped fresh parsley for serving, if desired, and enjoy!
